
Prep 1 hr - Serves 4
Ingredients:
4x large organic chicken breasts
2x large white onions
2x large tsp of spices (you can buy these either in a cube or a little tub)
2x large tsp black pepper
3x fresh red chilli
1x tbsp. tomato puree
6x plum/cherry tomatoes
3x large carrots
1x large sweet potato (optional)
3-4x dessert spoons of natural organic peanut butter (or Almond butter as alternative)
1.5x dessert spoons of gluten free or coconut flour
Preparation :
1. Chop up onions, carrot, sweet potato, & chicken in large chunks
2. Chop up chilli (finely) put to one side
3. Make a peanut soup = add peanut butter into a large wok and start adding water gradually
until all peanut butter dissolved.
4. Add onions, chilli, spices/pepper & chicken - simmer for 25mins (PUT ON CAULIFLOWER
TO STEAM)
5. Add carrot & sweet potato and cook for 30 mins
6. Make a sauce thickener with the gluten free flour and sauce from wok - add gradually until all
dissolved
7. Thicken to your preference
Serve with Cauliflower Fried Rice
